Preheat oven to 350°F (175°C). Line an 8×8 pan with parchment paper.
Blend cottage cheese until smooth (optional).
Whisk cottage cheese, eggs, pumpkin purée, vanilla, and honey/maple syrup.
Stir in almond flour, cinnamon, pumpkin spice, baking powder, and salt.
Spread batter into prepared pan and bake 25–30 minutes, until toothpick comes out clean.
Cool completely before slicing into bars.
