Fry an onion (optional) in water (or directly in the coconut milk)
Add some mixed veggies
Add the curry paste
Add a can of light coconut milk
Add a cup of lentils to thicken
Add turmeric and garlic powder
Add water as you go if it's too thick
If you fry tofu, maybe keep it separate to preserve crunch; otherwise, you could boil tofu in salt water for 2 minutes (1 tbsp kosher, 1 tsp table) and add it
Consider adding noodles, baked tempeh. Etc.
