Cheap Lazy Vegan Green Curry

    Method

  1. Fry an onion (optional) in water (or directly in the coconut milk)

  2. Add some mixed veggies

  3. Add the curry paste

  4. Add a can of light coconut milk

  5. Add a cup of lentils to thicken

  6. Add turmeric and garlic powder

  7. Add water as you go if it's too thick

  8. If you fry tofu, maybe keep it separate to preserve crunch; otherwise, you could boil tofu in salt water for 2 minutes (1 tbsp kosher, 1 tsp table) and add it

  9. Consider adding noodles, baked tempeh. Etc.
