Tofu - better than pressed
  1. Cut the tofu into cubes and place in an 8x8 glass baking dish.

  2. Pour boiling water over the tofu and season heavily with salt (about 2 tablespoons).

  3. The boiling water shocks the tofu, causing the proteins to contract and forcing the moisture out.
