In a mixing bowl, stir together the cottage cheese, shredded cheddar cheese, all-purpose flour, cornmeal, chopped jalapeños, garlic powder, salt, black pepper, baking powder, and olive oil until evenly combined.
Drop tablespoon-sized portions of the mixture onto the prepared baking sheet, leaving about 2 inches of space between each one.
Bake for 15–18 minutes, or until the crackers turn golden brown and slightly crisp around the edges.
