In a large bowl, mix warm water, yeast, and honey.
Cover and let sit for 20 minutes until foamy.
Add flour, salt, egg yolks, and olive oil.
Mix by hand or with a stand mixer until the dough comes together.
Turn the dough onto your counter.
Do a few coil folds or knead until it stops sticking.
Return it to the bowl, cover, and let rise for about 1 hour.
Punch it down, fold again, and cover.
Let it rest in the fridge until evening (or whenever you're ready to fry).
Heat your oil to 350°F.
Cut the dough into small pieces.
Fry until golden, flipping if needed.
Cool on a rack.
Mix honey and maple syrup.
Toss warm doughnuts in the syrup to coat.
Top with crushed walnuts, flaky salt, and cinnamon.
