Lemon Blueberry Loaf
  1. Rub the lemon zest with caster sugar and whisk it with the eggs until pale and fluffy.

  2. Whisk in the flour and baking powder.

  3. Stir in the lemon extract, vanilla extract, melted butter, and cream.

  4. Fold in the blueberries. Coat them with a spoon of flour to ensure they don't sink.

  5. Transfer the batter to an 8X4 inch loaf pan and bake at 180C for 40-45 minutes
