Gently bring together, being careful not to overwork your pastry, then remove and place onto a lightly floured surface. Knead three or four times until it comes together into a ball, cover with clingfilm and transfer to the fridge for at least 30 minutes before using. This pastry will keep for up to 7 days in your fridge and 3-6 months in the freezer.
