Start by browning the wings on both sides before adding ginger, bonito broth, sake, mirin, soy sauce, and chicken feet.
Let reduce by at least half but probably ⅔rds. Skim any scum that rises to the top.
Strain and pour into a cake pan and refrigerate overnight.
Carefully loosen the edges then flip the pan onto your cutting board.
Cut into cubes.
Whisk eggs then add to a pan on medium low heat and using chopsticks, constantly agitate them to form small curds.
Serve over very hot rice and enjoy! The cubes will melt quicker if you sorta stir it around.
