Preheat oven to 400°F. Line a baking sheet with parchment.
Combine onion, herbs, spices, oil, parmesan, and breadcrumbs in a bowl.
Whisk egg and add with turkey. Mix gently until combined.
Scoop 1.5 tablespoons, roll into balls, and place on sheet.
Cook 22–30 minutes until golden brown and cooked through.
Toss with tomato sauce, pasta, or enjoy as is. Freeze without sauce for later.
