Mexican Lasagna
  1. Pre-heat your oven to 200 degrees Celsius.

  2. Dice your onions and fry for 3-4 mins or until softened.

  3. Add your beef mince to the pan and season with Salt, Pepper, Paprika, Garlic powder & ½ your taco seasoning packet. Mix thoroughly and whilst that's cooking, dice up your peppers.

  4. Once your mince has browned, add your diced peppers and cooked for 3 minutes.

  5. Add your drained kidney beans and tin of chopped tomatoes.

  6. Season again using the same seasonings as before and the remainder of your seasoning packet.

  7. Layer your lasagna by adding a base layer of your meat mixture and then 25g grated mozzarella. Then add 1 and a ½ of your tortilla wraps to cover the first layer completely. Repeat this step.

  8. Add the remainder of your meat mixture over the 2nd layer of tortilla wraps and then top with the remainder (200g) of your cheese.

  9. Cook in the oven for 15 minutes. Then let rest for 5-10 mins before slicing.

  10. Serve & enjoy!
