Hot Cross Buns
  1. Steep a strong cup of earl grey tea. Add your raisins to the hot tea and set aside to hydrate. You can also hydrate in hot water.

  2. Melt your butter and add your spices/orange zest. Mix and set aside.

  3. In a large bowl, combine warm milk, sugar and yeast. Then add one egg, slightly cooled butter and spice mixture, flour and salt. Mix till a shaggy dough forms. It will look wet!

  4. Cover and let rest for 10-15 minutes.

  5. While resting, drain and pat dry your raisins.

  6. Once rested, fold in your raisins and turn the dough out onto a lightly floured counter to knead.

  7. Knead by hand for 5-7 minutes until the dough is nice and smooth!

  8. Pop in a greased container and proof for 1 hour.

  9. Portion into 12 equal pieces and roll into little boules.

  10. Place in a 9x13 pan and let proof, covered, for an additional 30-40 minutes.

  11. While proofing, mix together 60g flour and 60g water (if it feels too thick you can add 5-10 more grams water).

  12. Place in a piping bag or ziplock bag with a corner cut to pipe from. Pipe your crosses onto your buns.

  13. Bake at 375F for 18-20 minutes till golden.

  14. Brush with warmed apricot jam or create a syrup by boiling the juice of one orange with ½ cup honey.

  15. Let cool slightly and EAT!!!
