Copy of Zucchini Noodles Baked In Olive Oil (low Carb Pasta)
  1. Preheat oven to 400 degrees F.

  2. THIS STEP MODIFIED BY MGD — Spiralize or peel zucchini strips. To remove excess water, toss the zoodles with salt and leave them in a strainer or colander for at least 15 minutes. To remove even more water, spin them after the initial draining. Once done, add olive oil, salt and pepper, or whatever seasoning you opt to use (see MGD notes below). Mix everything well until all the noodles are thoroughly coated with olive oil. Spread noodles evenly over entire sheet pan (optional: line the pan with baking parchment if desired, to prevent sticking).

  3. Bake in oven for about 10 minutes, checking noodles about ¾ way through. Remove noodles and use immediately.
