Heat a pan over medium heat and add 2-3 tbsp vegetable broth or water
Add the ground turkey and cook for 2-3 minutes, breaking it apart with a spatula
Add the carrots and celery and continue cooking for 6-8 minutes, stirring occasionally. Add another splash of broth or water if the pan begins to dry out. Cook until the turkey is fully cooked and the vegetables are tender
Season with sea salt, black pepper, and dried thyme
Transfer everything to a bowl and toss with lemon juice and fresh parsley
Top with cubed avocado or a drizzle of extra virgin olive oil
