Cottage Cheese Cookies
  1. Ensure all ingredients are at room temperature.

  2. In a bowl, combine the softened butter, sugar and egg. Mix together until well incorporated.

  3. Gradually add flour, mixing carefully until a dough forms. The dough should not be sticky.

  4. Cover the dough with plastic wrap and refrigerate for 30 minutes.

  5. For the filling, mix cottage cheese, half of egg, powdered sugar, vanilla paste and flour in a bowl until it forms a paste.

  6. Roll the dough into a sausage shape. Cut into 7 equal pieces and shape each piece into a ball.

  7. Take one piece and roll it out into an oval shape, but not too thin.

  8. Place filling on one side of the oval. Carefully fold and pinch the edges to seal, leaving the front open to expose some of the filling.

  9. Repeat with the remaining 6 dough pieces.

  10. Preheat the oven to 210°C ( withou fan)

  11. Place the cookies on a baking tray. Brush the tops with egg wash.

  12. Bake for 20 minutes until the cookies are golden brown. It is normal, if there is cracks on top.

  13. These cookies are delightful when warm but also delicious when cooled.
