Cook rice per package directions using broth and a small pat of butter
In a large skillet over medium heat, add olive oil and brown the chorizo or sausage until cooked through
Add the chopped onion and sauté until softened, translucent and fragrant, about 3-5 minutes
Add the minced garlic for 30-60 seconds, then remove the sausage and onion mixture to a bowl
Sauté the peppers for 2-3 minutes until softened and move to the bowl
Add butter to the skillet and allow to melt and warm
Add the cubed pineapple and allow to cook and caramelize on one side without stirring for about 5 minutes
Toss the pineapple and continue to caramelize for a few more minutes
Add the chorizo, vegetables, and cooked rice to the caramelized pineapple and toss to combine
Whisk together mayo, Greek yogurt, chipotle pepper, adobo sauce, and lime juice to make the creamy chipotle sauce
Serve warm rice bowls with creamy chipotle sauce drizzled on top
