In a medium bowl, whisk together the flour, salt, baking powder, and sugar. In a separate bowl, beat the egg, then mix in the milk and vanilla extract. Gradually stir the wet ingredients into the dry ingredients until the batter is smooth.
In a deep skillet or pot, heat 1 inch of oil over medium heat until it reaches 350°F (175°C).
Using a spoon or cookie scoop, drop spoonfuls of batter into the hot oil. Fry for 2-3 minutes, flipping halfway through, until golden brown.
Remove the bites from the oil with a slotted spoon, and drain on paper towels. While still warm, dust generously with powdered sugar.
