In a large soup pot over medium high heat, add 1 tablespoon of seasoned olive oil from the sundried tomatoes jar plus 1 tablespoon of regular olive oil
Add a small diced onion and cook for about 5 minutes until soft
Add ½ cup sun dried tomatoes, 2 minced garlic cloves, and 2 tablespoons tomato paste
Stir together and cook for 2 minutes
Add 6 cups chicken broth, 2 cups whole milk, 1 teaspoon Italian seasoning, ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper
Stir and bring the liquid to a simmer
Add 2 cups pulled rotisserie chicken meat, 2 cups chopped baby spinach, and 8 ounces pasta
Cook, stirring occasionally, until pasta is tender (about 10 minutes)
Add ½ cup grated Parmesan cheese and stir until well combined
Serve with extra Parmesan cheese for topping
