In a small bowl, combine the mashed banana, peanut butter and maple syrup.
Stir in oats.
Fold in chocolate chips and chopped peanuts.
Scoop onto a lined baking sheet and flatten (this batch made 6 cookies). Add more chips on top if desired.
Bake in the oven for 10-12 minutes at 375F.
Remove from oven, add flaky sea salt (optional), and enjoy!
