Preheat oven to 400F.
Cut potatoes into wedges (I didn't peel mine)
Mix lemon juice, broth, olive oil, garlic, oregano, salt, and pepper in a 9 x 13-inch baking dish.
Add potatoes, sprinkle with extra salt, pepper and paprika. Cover with foil, and bake for 45 minutes.
Uncover and bake for 25 minutes more until completely fork tender.
Broil 5-7 minutes for crispy edges. Sprinkle with chopped parsley. Serve warm, drizzling with pan juices.
