Hidden Veggie Texas Chili
  1. Chop up 4 medium sized carrots, 2 stalks of celery, & 1 leek

  2. Add the veggies to a food processor & pulse until they're chopped super small

  3. To a large pot on medium-low heat, add ¼ cup olive oil then add in 1 diced onion & the chopped veggies. Sauté for about 5-7 minutes or until the onions & veggies have softened

  4. Add in 2 lbs of ground beef & continue cooking for about 7-10 minutes until the beef is cooked

  5. Add in 1 TBSP garlic powder, 3 TBSP cumin, 3 TBSP chili powder, 1 TBSP oregano, 1.5 tsp salt, 1 tsp smoked paprika, & 1 tsp coriander. Mix until all the beef & veggies are covered in seasonings

  6. Add in 2 cups beef broth & a 28 oz can of crushed tomatoes (i like to blend it first so there are no chunks of tomato)

  7. Bring the mixture to a simmer then reduce the heat to medium-low, cover w a lid, and cook for 40 minutes

  8. Let cool, top w whatever u want, & enjoy!!
