Zuppa Toscana
  1. Cook the Sausage and Bacon: In a large pot, cook sausage over medium heat until browned. Remove and set aside. In the same pot, cook bacon until crispy, then remove and set aside, leaving a bit of bacon grease in the pot.

  2. Sauté Onion and Garlic: Add diced onion and garlic to the pot, sautéing until fragrant and softened, about 3 minutes.

  3. Add Broth and Potatoes: Pour in chicken broth, then add potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.

  4. Add Cream, Kale, and Meat: Stir in the heavy cream, kale, cooked sausage, and bacon. Simmer for another 5 minutes until kale is wilted and everything is heated through. Add salt, pepper, and red pepper flakes (if using) to taste.

  5. Serve: Ladle into bowls and serve hot with crusty bread on the side if desired.
