Season meat w/ salt & pepper, and sear it in a hot pot. Remove meat, and in the same pot saute your onions, garlic and tomatoes until soft. Add in tomato paste, and cook for 3-4 mins.
In a separate pan, add in all ingredients under "Chilies and spices" and lightly toast until fragrant. Add this back into the pot w/ beef stock. Allow this to simmer for 45 minutes or until beef is tender.
Remove chillies/spices from the pot along with some of the liquid and blend until smooth. Shred the meat as well.
Add these back to the pot with parmesan cheese, cooked pasta, pasta water and butter. Serve with onions, cilantro and more cheese and enjoy!
