Greek Yogurt Banana Bread
  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

  2. In a large bowl, mash the bananas until smooth. Stir in the Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until well combined.

  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

  4. Gradually fold the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix.

  5. If using walnuts or chocolate chips, gently fold them into the batter.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
