Oatmeal Diet Cake
  1. Preheat your oven to 350°F (175°C). Grease a cake pan or line it with parchment paper for easy removal.

  2. In a blender or food processor, pulse the rolled oats until they turn into a coarse flour-like consistency.

  3. In a mixing bowl, combine the blended oats, unsweetened applesauce, Greek yogurt, honey or maple syrup, eggs, and vanilla extract. Mix until well combined.

  4. Add the baking powder, baking soda, ground cinnamon, and pinch of salt to the wet mixture. Stir until everything is incorporated evenly.

  5. If desired, fold in chopped nuts, raisins, dried fruits, or dark chocolate chips for added texture and flavor.

  6. Pour the batter into the prepared cake pan and spread it evenly.

  7. Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  8. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack to cool completely.

  9. Feel free to top the cooled cake with a light dusting of powdered sugar, a drizzle of honey, or a dollop of Greek yogurt.
