Add lemon juice to milk and leave to rest
Mix flour, bicarb, baking powder and cold grated butter together until roughly combined with lumps remaining
Add herbs, grated cheese, mustard powder, salt and seasoning to the flour mixture
Mix in the lumpy milk mixture gradually with a knife until all incorporated
Put onto a lean surface and scrunch together until just combined as one
Make into a rough rectangle and roll gently
Laminate by folding into thirds, then turn and fold into thirds again
Make into a 4cm thick rectangle
Wrap in clingfilm and chill for 20-30 minutes if possible
Trim sides for better rise
Cut into 8 pieces or however many desired
Place onto lined baking tray
Brush tops with egg, butter or milk and add a little grated cheese
Bake in preheated oven at 200°C for 15-22 minutes until golden
