Beignets
  1. Put warm water in bowl, sprinkle yeast + stir thoroughly, dissolved. Let proof 10 min

  2. Add rest of sugar, salt, eggs, and evaporated milk.

  3. Gradually stir in the 7 c. flour and beat with wooden spoon until smooth and thoroughly blended

  4. Beat in shortening, then remain flour (⅓ c at a time) beating until it becomes too stiff to stir. Then use hands

  5. Cover bowl w/plastic (greased). Refrigerate overnight

  6. Roll to ¼" cut into rectangles 2x3

  7. Heat oil to 360°

  8. Fry 3-4 @ a time, 2-3 min (turning over with tongs)

  9. Drain on paper towels

  10. Keep warm in 200° oven

  11. Sprinkle heavily w/ powdered sugar
