Cook diced onion in a pan on medium heat
Add extra lean beef mince and seasonings (salt, onion powder, garlic powder, sage, thyme, smoked paprika)
Add diced garlic and Worcestershire sauce, let fully cook through
Add tomato paste and mix, then set aside
Mix eggs with salt in a bowl
Add light butter to a pan on medium heat and add eggs
Constantly stir and fold eggs gently until fluffy
Grab a warm tortilla and evenly distribute the beef mince and eggs
Add sriracha mayo and chives to each burrito
Roll tortillas tightly
Place cheese on a pan with burritos on top for a few minutes until golden brown and crispy
Wrap burritos and store in fridge or freezer
To reheat: microwave for 2 minutes, then air fry or oven bake at 190C/375F for 5-8 minutes, or pan fry on low heat for 5 minutes
