Cut your rib rack into individual ribs. Add to a large bowl with the rest of your ingredients and give it a good mix. Cover and marinade for 1 hour in the fridge
Preheat the over to 275. Lay out tin foil and then add 4 ribs. Add some Koren spice rub to the tops. Fold over each side until the ribs are covered. Add tin foil to a large baking sheet and add the packets of ribs. Cook for 3 hours
Make your cucumber salad. Thinly slice your cucumbers and add to a bowl. Add the rest of the ingredients - mix and then set aside
Prepare and cook your rice
Once the ribs are done, brush on some Japanese BBQ sauce and sprinkle some additional Korean BBQ rub. Broil for a few minutes. Serve and enjoy!!
