Melt 1 Tbsp butter in a small pot
Add couscous and a pinch of salt
Cook, stirring, until butter is lightly browned and couscous is toasted
Add chicken stock and bring to a boil
Once boiling, cover and reduce to a simmer
Cook until tender, 6-8 minutes
When ready to serve, stir in other Tbsp butter, lemon juice and zest to taste, and salt and pepper to taste. Enjoy!
