Preheat your oven to 475°F, using convection if you have it
Bring some water to a boil
Once the oven is fully preheated, place your loaves on baking sheets
Prepare an oven-safe bowl, place it on the bottom of the oven and fill it with boiling water
Put the baking sheets with the loaves into the oven
After 5 to 7 minutes, score your loaves
Continue baking at 475°F for another 15 minutes
Reduce the oven temperature to 420°F and continue baking for 15 minutes
Check that the internal temperature reaches 97°C (207°F), continue baking longer if needed
Let the loaves rest on the counter for 2 to 4 hours before slicing or freezing
