Open Bake Technique For Multiple Sourdough Loaves
  1. Preheat your oven to 475°F, using convection if you have it

  2. Bring some water to a boil

  3. Once the oven is fully preheated, place your loaves on baking sheets

  4. Prepare an oven-safe bowl, place it on the bottom of the oven and fill it with boiling water

  5. Put the baking sheets with the loaves into the oven

  6. After 5 to 7 minutes, score your loaves

  7. Continue baking at 475°F for another 15 minutes

  8. Reduce the oven temperature to 420°F and continue baking for 15 minutes

  9. Check that the internal temperature reaches 97°C (207°F), continue baking longer if needed

  10. Let the loaves rest on the counter for 2 to 4 hours before slicing or freezing
