Add chicken, spring onions, ginger, mirin, soy sauce and cornflour to a bowl. Mix thoroughly.
To a plate add water and a splash of soy sauce. Lightly dip a rice paper sheet.
Set onto a non stick surface. Cover chicken mixture to the first half of rice paper and roll carefully into a roll.
Wrap again with another sheet. Use scissors to cut into bite size pieces.
Air fry for 8-10 minutes on 200 degrees C.
