Ingredients:
✅ 6 large eggs
✅ ¾ cup fat-free cottage cheese
✅ ¼ cup shredded reduced-fat cheddar cheese (or mozzarella)
✅ ¼ cup diced bell peppers (any color!)
✅ ¼ cup chopped spinach (or kale)
✅ ¼ cup diced onions
✅ ½ tsp garlic powder
✅ ½ tsp salt & black pepper (to taste)
✅ Cooking spray (for greasing muffin tin)
Instructions
1️⃣ Preheat Oven to 350°F (175°C). Spray a 12-cup muffin tin with nonstick cooking spray.
2️⃣ Blend the Base: In a blender or food processor, blend cottage cheese, eggs, garlic powder, salt, and pepper until smooth.
3️⃣ Add Veggies & Cheese: Stir in cheddar cheese, bell peppers, spinach, and onions.
4️⃣ Fill Muffin Cups: Pour the mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
5️⃣ Bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
6️⃣ Cool & Serve: Let cool for 5 minutes, then remove from the muffin tin. Enjoy warm or store for meal prep!
