Prepare aromats and spices: slice onions and ginger root
Toast star anise, cardamom pods, coriander seeds, cloves, fennel seed, and cinnamon stick to release flavors
Boil whole chicken in water with toasted spices, onions, and ginger
Skim impurities from the broth
Simmer the broth for at least 1 hour (preferably 1 hour 45 minutes)
Add rock sugar, salt, chicken seasoning powder, and fish sauce to taste
Cook phở noodles according to package directions
Rinse noodles with cold water
Shred or slice the cooked chicken
Assemble bowls: place noodles in bowl, add chicken, pour hot broth over
Top with desired garnishes: sliced white onions, coriander, spring onions, Thai basil, bean sprouts, lime, chillies, pepper, and optional egg yolk
Serve with lime wedges, sriracha, and hoisin sauce on the side
