Ingredients:
1 Whole wheat tortilla
2 eggs, whisked
25g cheddar cheese grated
15g Parmesan cheese grated
Large handful Spinach
15g Feta cheese crumbled
Olive oil for cooking
Pepper to taste
Optional add-ons: cherry tomatoes, olives, mushrooms, pickled jalapeños,
avocado, bacon.
Method:
Sprinkle cheddar cheese + Parmesan cheese into the frying pan
Pour in the whisked egg
Add the tortilla on top of the egg then flip it over
Add the spinach and feta.
Fold to serve.
