Low Carb Chinese Salt & Pepper Chicken
  1. Cut chicken into bite-sized pieces

  2. Mix coating ingredients together

  3. Prepare salt & pepper mix

  4. Cut vegetables into large chunks

  5. Dip chicken pieces in beaten egg

  6. Coat chicken in pork rind mixture

  7. Shake off excess coating

  8. Rest coated chicken for 5 minutes

  9. Heat oil to 180°C

  10. Fry chicken in batches until golden

  11. Drain fried chicken on paper towels

  12. Keep chicken warm

  13. Heat wok until smoking

  14. Add sesame oil to wok

  15. Stir fry onions and peppers for 2 minutes

  16. Add minced garlic and sliced chilies

  17. Toss quickly

  18. Return fried chicken to wok

  19. Add salt & pepper mix to wok

  20. Toss everything together

  21. Add spring onions

  22. Check seasoning and adjust as needed

  23. Garnish with sliced spring onions, fresh chilies, sesame seeds, and fresh coriander
