Cut chicken into bite-sized pieces
Mix coating ingredients together
Prepare salt & pepper mix
Cut vegetables into large chunks
Dip chicken pieces in beaten egg
Coat chicken in pork rind mixture
Shake off excess coating
Rest coated chicken for 5 minutes
Heat oil to 180°C
Fry chicken in batches until golden
Drain fried chicken on paper towels
Keep chicken warm
Heat wok until smoking
Add sesame oil to wok
Stir fry onions and peppers for 2 minutes
Add minced garlic and sliced chilies
Toss quickly
Return fried chicken to wok
Add salt & pepper mix to wok
Toss everything together
Add spring onions
Check seasoning and adjust as needed
Garnish with sliced spring onions, fresh chilies, sesame seeds, and fresh coriander
