Jamie Oliver's Lemon-tzatziki Chicken
  1. Grate the zest of 1 lemon into a mixing bowl.

  2. Squeeze the juice of both lemons into the bowl.

  3. Add the olive oil, Greek yogurt, minced garlic, and dried oregano to the bowl. Mix well.

  4. Season the chicken breasts with salt and pepper.

  5. Place the chicken in a large zip-top bag and pour the marinade over it. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 1 hour, or overnight if possible.

  6. Preheat a grill or grill pan over medium-high heat.

  7. While the grill is heating, peel and grate the cucumber.

  8. Place the grated cucumber in a clean kitchen towel and squeeze out any excess moisture.

  9. Stir the grated cucumber into the Greek yogurt mixture to make the tzatziki sauce. Season with salt and pepper to taste.
