Homemade Salsa
  1. Score a small “x” on the bottom of each tomato with a sharp knife. Lay tomatoes, jalapeño and garlic in a single layer and drizzle with olive oil and salt. Allow to cook for about 6-7 minutes, flipping halfway. Tomatoes will be tender and charred. Once roasted, carefully peel off charred tomato skin.

  2. Muddle jalapeños and garlic in a molcajete or a stone mortar and pestle. Then add tomatoes and continue to muddle. Next add salt, lime juice, onion and cilantro.

  3. Enjoy with tortilla chips, tacos, over eggs, baked potato, salad, or pretty much anything as a fresh and delicious condiment!
