Cook the Cheese Tortellini: Boil a large pot of salted water, add tortellini, cook for 3 to 5 minutes until tender, drain and set aside.
Season and Sear the Chicken: Season chicken with Cajun seasoning, salt, black pepper, and garlic powder. Heat olive oil in a skillet, sear chicken for 5–6 minutes until browned, then set aside.
Sauté the Bell Pepper and Garlic: In the same skillet, melt butter, sauté red bell pepper for 3–4 minutes, add minced garlic and cook for 1 minute. If using, add baby spinach and cook until wilted.
Make the Creamy Cajun Alfredo Sauce: Pour in heavy cream and milk or broth, simmer for 2–3 minutes. Stir in parmesan cheese and mozzarella until melted and smooth.
Combine the Chicken and Tortellini: Add cooked tortellini and seared chicken to the skillet, fold together and heat for 1–2 minutes.
Garnish and Serve: Sprinkle with chopped parsley, Cajun seasoning, and black pepper before serving.
