One-Pan Greek Chicken with Lemon and Olives
  1. Preheat your oven to 375°F (190°C).

  2. In a large ovenproof skillet, heat the olive oil over medium-high heat.

  3. Season the chicken breasts with salt, pepper, and oregano. Sear them in the skillet until golden on each side, about 3-4 minutes per side.

  4. Remove the chicken from the skillet and set aside.

  5. In the same skillet, add the garlic, red onion, and tomato. Sauté for about 2 minutes until the onions are slightly softened.

  6. Add the lemon juice, half the zest, and the olives to the skillet and stir to combine.

  7. Return the chicken to the skillet and nestle it into the sauce.

  8. Transfer the skillet to the oven and bake for about 15-20 minutes, or until the chicken is fully cooked.

  9. Garnish with fresh parsley and the remaining lemon zest before serving.
