Blend all of the broth ingredients together with a few ice cubes until completely smooth and creamy.
Cook your noodles according to packet instructions, then rinse really well under cold water until chilled.
Divide the noodles between bowls and pour over the cold broth.
Top however you like. I went for crispy tempeh, cucumber, kimchi, spring onion, sesame seeds, and a few extra ice cubes to keep everything as cold as possible.
