Homemade Chicken Nuggets
  1. Preheat your oven to 220°C/428°F.

  2. Place the chicken breast, potato, onion, salt, pepper and garlic powder in a food processor and blend until all is minced.

  3. Combine the breading mix (I like to toast the breadcrumbs for 4-5 minutes in the oven) to get that golden colour.

  4. Shape the chicken mixture in your hand into nuggets and toss into the breadcrumbs to completely coat.

  5. Line a baking tray with parchment paper. Brush generously with olive oil and arrange the nuggets.

  6. Bake for 10-12 minutes, turn over, then cook another 7-8 minutes or until cooked through.

  7. Remove and let them rest for a few minutes prior to serving.
