Broccoli Crunch Salad With Creamy Peanut Dressing
  1. First, parboil the broccoli. Heat a large pot of water on the stove until boiling-add the broccoli and let cook for 1 minute then immediately remove and transfer to an ice bath. Drain the water and transfer to a large bowl.

  2. NOTE: you can skip the step if you have the@cookanyday cookware-just add florets to the container with a few tablespoons of water and microwave for 2 minutes.

  3. Next, add the broccoli to a large bowl along with the salad ingredients.

  4. Last, make the dressing. In a small blender or bowl, add all ingredients and blend/mix until creamy.

  5. Pour over the salad, toss to coat well and enjoy!
