  1. Pound black pepper corns, garlic, and chilli pequins in a mortar

  2. Toast dried shrimp and add to the mortar, pound further

  3. Add lime juice, fish sauce, and pound

  4. Julienne the green papaya and pound in batches in the mortar

  5. Mix in a serving dish, adjust seasoning if needed

  6. Garnish with chopped tomatoes and parsley or celery leaves
