Preheat oven to 425 degrees.
Add the potatoes to boiling salted water and boil until for tender.
Meanwhile cook the ground beef in a skillet. Drain and add 2 tablespoons of taco seasoning and ¼ cup water. Cook for 2-3 minutes. Set aside.
When the potatoes are for tender and them to a sheet pan that is lined with parchment paper. Spray cooking spray on the bottom of a 9x13 dish and use it to smash the potatoes. A glass works well for this also.
Drizzle the potatoes with some olive oil. Season the potatoes with the chili lime seasoning. Top with taco seasoned beef, red onion, black olives, jalapeño, diced red pepper and shredded cheese.
Place in preheated oven and bake for 15-20 minutes or until the cheese is melted and everything is cooked through.
Top with your favorite toppings such as pico de gallo, sour cream and cilantro. Enjoy!
