Low Carb Cauliflower Mash
  1. Chop your cauliflower into florets, if necessary. Place it in a pot and cover with water.

  2. Bring the pot of cauliflower to a boil and cook the veggies until they are soft and break apart easily - about 20 minutes. Drain the water, and stir in the butter. It’s okay if the cauliflower starts to crumble.

  3. Transfer the cauliflower to a food processor. Combine the cream, garlic, salt, and pepper in the processor until the cauliflower is creamy and smooth.

  4. Serve hot with chopped parsley and enjoy!
