Cut the puff pastry in half lengthwise.
Spread the spinach and ricotta mixture evenly over the puff pastry halves.
Roll up the pastry tightly and seal the edges.
Brush the rolls with beaten egg and sprinkle with pumpkin seeds.
Bake in the preheated oven for 25-30 minutes or until golden brown.
