Step 1: Heat sesame oil, then sauté garlic and ginger until fragrant. Add broth, soy sauce, oyster sauce, chili oil, sugar, and chili paste. Simmer.
Step 2: Season and sear steak until browned; remove. Cook shrimp until pink, then set aside.
Step 3: Drop wontons into the simmering broth for 4–6 minutes. Add noodles and bok choy, simmer until tender.
Step 4: Divide noodles, wontons, and vegetables into bowls. Pour hot broth over and top with steak and shrimp. Garnish with sesame seeds and chili slices.
