Ultra Soft And Moist Vanilla Cupcakes
  1. Preheat a fan forced oven to 120C / 250F (140C / 275F for no fan). Line two 12 hole cupcake/muffin trays with cupcake liners.

  2. Combine dry ingredients - Add the cake flour, sugar, baking powder and salt to a large mixing bowl or stand mixer fitted with a paddle attachment and mix until well combined.

  3. Add butter - Add the softened butter and mix on medium speed until mixture resembles a sand like texture.

  4. Add remaining ingredients - Next, add the eggs, milk, vegetable oil, yogurt and vanilla and mix on low speed until the batter is evenly mixed and no dry ingredients are showing.

  5. Use an ice cream scoop or two tablespoons to transfer the batter into the cupcake liners filling them up ¾ of the way.

  6. Bake for 40 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for 5 minutes before transferring to a cooling rack.

  7. Frost with your favorite frosting of choice
