In a medium bowl, combine the fresh fruit, honey, lemon juice, and vanilla. Mash the fruit slightly with a fork.
In a separate bowl, mix together the rolled oats, whole wheat flour, brown sugar, and salt. Stir in the melted butter until well combined.
Spread the fruit mixture evenly in the prepared baking pan. Top with the oat crumble mixture, pressing down gently.
Bake for 30-35 minutes, until the top is lightly golden brown. Allow to cool completely before cutting into bars.
