Preheat the oven to 420F / 220C
On a baking pan with parchment paper, place the chicken thighs and add all the rest of the ingredients.
Using your hands mix everything together well. Spread the chicken evenly on the baking pan.
Top with cherry tomatoes, fresh oregano leaves, and a sprinkle of flaky salt.
Bake in the oven at 420°F for 35 minutes, then switch to convection broil at 450°F for 7–8 minutes to achieve a nice golden color.
